Abstract

The video features a herder’s daily food preparation, particularly sheep head meat and bread. Torgon, a herder from Hobogsair, explains that every part of meat from livestock has its specific way of consumption. Some parts are important socially, while others are significant for family members. For example, Torgon said that the sheep's skull, the cranium, and the jawbone have to be separated even before cooking, as both have different meanings in ritual and everyday consumption. However, people nowadays are not aware of their cultural roots in meat consumption, leading them to easily buy meat from markets and eat according to the seasons, rather than cultural understanding. The second part of the video shows the process of baking. According to Torgon, Torghuts used to lack the equipment for baking as they have nowadays and only baked in their cooking pots. However, benefiting from the surrounding Kazakhs and the Chinese pot technique, Torghuts now eat special bread that is less common in other Mongolian regions.
