Abstract
As an increasing number of people particularly in Europe and North America shift away from traditional sources of protein, especially red meats, there is an ever-growing demand for alternative foods that meet the same nutritional requirements. Protein from insects provides significant nutritional and environmental benefits, however work needs to be done to improve public perception and ensure sufficient regulation in countries where the consumption of insects is not well established.
